Avocado Toast Two Ways: Smoked Salmon & Soft Boiled Egg

Avocado toast is a staple for us, it’s filling without being heavy, and functions as an excellent delivery vehicle for a variety of ingredients you may find along your journey.

Smoked salmon makes a regular appearance on our trips. I prefer hot-smoked salmon for avocado toast because the texture stands up better, but both hot- and cold-smoked salmon work great. They come vacuum packed in plastic containers and will last for weeks in cold-storage if unopened.


For a quick breakfast, nothing beats the speed of smoked salmon avocado toast, but if you’ve got more time in the morning try substituting soft-boiled eggs for the salmon, it takes the toast to the next level and makes a great impression on other campers.


Soft-boiled eggs are a great option for overlanders. You don’t have to worry about maintaining the perfect cooking temperature requisite for poached eggs—you just drop them in boiling water, set a timer, and go about preparing the rest of your ingredients while they cook. Ingredients:

6 oz. Smoked Salmon or 2 Eggs

4 Slices Sprouted Wheatberry Bread (substitute GF bread for gluten free)

2 Slices Shallot or Red Onion

1 Tomato

¼ Cucumber

1 Avocado

Pinch of Dill, fresh or dried

Salt and Pepper to taste


Description: A Scandinavian spin on avocado toast, this breakfast features the crisp textures of fresh cucumber and shallot to help counter the richness of the avocado. This is at once light yet satisfying, keeping you fueled for hours.


Instructions: Begin with thinly slicing the shallot and cucumber, and thickly slicing tomato.


Halve, pit, and peel the avocado. Slicing the avocado thinly will enable you to spread the avocado delicately yet firmly into the toast, creating a strong foundation for your other ingredients without destroying the bread.


Smoked Salmon Option


Remove salmon from its wrapper and set aside.


Prepare toast using your preferred method and begin building. Gently fan avocado across bread and press firmly. Add a slice of tomato, two slices of cucumber, a few slivers of shallot or red onion, and top with large pieces of smoked salmon. Finish with a sprinkling of dill and enjoy.


Soft Boiled Egg Option


Bring a medium pot of water to a low boil. Prepare a timer, add eggs, and cook for your desired doneness. Cooking time will vary depending on altitude, but your average 6-minute egg will feature firm whites with a luscious, runny yolk.


When done, quench eggs in a cold water bath to prevent them from over cooking.

Prepare toast using your preferred method and begin building. Gently fan avocado across bread and press firmly. Add a slice of tomato, two slices of cucumber, a few slivers of shallot or red onion.


Gently crack and peel an egg. Place on top of the toast and gently cut in half to reveal the yolk. Top with a sprinkling of dill and enjoy.
